Ingredients

Grilled Ribeye:

  • 8-10 oz ribeye steak, room temperature

  • Sea salt and freshly ground black pepper, to taste

Garlic Butter:

  • 1 tablespoon butter (grass-fed preferred), softened

  • 1 small garlic clove, minced finely

Sautéed Spinach:

  • 2 cups fresh spinach leaves

  • 1 tablespoon extra-virgin olive oil (or substitute with butter or beef tallow if avoiding olive oil)

  • Sea salt and freshly ground black pepper, to taste

Preparation

Grilled Ribeye:

  1. Season Steak: Season the ribeye generously on both sides with sea salt and pepper.

  2. Grill Steak: Preheat grill or skillet over medium-high heat. Cook steak approximately 4-6 minutes per side, depending on thickness and desired doneness (medium-rare internal temperature about 130°F-135°F).

    Cooking Tip: Let steak rest at least 3-5 minutes after grilling before serving to retain juiciness.

Garlic Butter:

  • While steak cooks, combine softened butter and minced garlic in a small bowl, mixing thoroughly.

Sautéed Spinach:

  1. Cook Spinach: Heat olive oil (or butter/beef tallow) in a pan over medium heat. Add spinach and sauté gently for about 2 minutes, until wilted. Season lightly with salt and pepper.

    Cooking Tip: Spinach wilts quickly; remove from heat immediately to preserve nutrients and color.

Plate & Serve:

  • Place ribeye steak onto a plate, topping immediately with garlic butter to melt gently. Serve sautéed spinach alongside steak.
