Ingredients

  • 3 large eggs

  • 2 tablespoons diced cooked ham (no sugar added)

  • 2 tablespoons goat cheese, crumbled (optional dairy)

  • 1 tablespoon butter (grass-fed preferred)

  • Sea salt and freshly ground black pepper, to taste

  • 1 small ripe avocado, sliced

Preparation

  1. Prepare Eggs: Whisk eggs lightly in a bowl. Season lightly with salt and pepper.

  2. Cook Omelet: Melt butter in a non-stick skillet over medium-low heat. Pour eggs into the pan, gently swirling to coat the bottom evenly. Cook about 2 minutes until eggs begin to set around the edges.

  3. Add Fillings: Sprinkle diced ham and crumbled goat cheese onto one half of the omelet. Cook another minute until eggs are set.

    Cooking Tip: Cooking the omelet on low heat keeps eggs fluffy and prevents burning.

  4. Fold & Serve: Carefully fold empty side of the omelet over fillings, gently slide onto a plate, and serve immediately with sliced avocado on the side.
