Ingredients

Roasted Leg of Lamb:

  • 6-8 oz boneless leg of lamb portion

Mashed Cauliflower:

  • 1½ cups fresh cauliflower florets

  • 1 tablespoon butter (grass-fed preferred)

  • 2 tablespoons heavy cream (or more as needed)

  • Sea salt, to taste

Preparation

Roasted Leg of Lamb:

  1. Preheat Oven: Set oven to 375°F (190°C).

  2. Season Lamb: Rub lamb generously with chopped rosemary, salt, and pepper. Place lamb in a roasting pan or oven-safe dish.

  3. Roast Lamb: Roast in oven for about 60-75 minutes (medium-rare to medium, internal temperature of 135-145°F). Allow lamb to rest 5-10 minutes before slicing.

    Cooking Tip: Resting meat after roasting ensures juiciness and tenderness.

Mashed Cauliflower:

  1. Steam Cauliflower: Place cauliflower florets into a microwave-safe bowl with 2 tablespoons water. Cover and microwave until soft (about 5-6 minutes). Drain any excess water.

  2. Mash Cauliflower: Add butter and cream to steamed cauliflower, then mash or blend until smooth and creamy. Season lightly with salt.
