About the Recipe

A simple, protein-packed breakfast featuring perfectly fried eggs cooked in flavorful bacon grease and served with crispy bacon slices. This affordable, satisfying meal is easy on the wallet while delivering plenty of flavor and healthy fats.

Ingredients

Fried Eggs & Bacon:

  • 2-3 large eggs (any grade, store-brand for affordability)

  • 2 slices of bacon (regular cut, value pack preferred)

  • Pinch of sea salt

  • Freshly ground black pepper, to taste

Preparation

Cook the Bacon:

  1. Heat Skillet: Place a skillet over medium heat and lay bacon slices flat in the pan.

  2. Cook Until Crispy: Cook for 4-5 minutes on one side, then flip and cook for another 2-3 minutes until crispy and golden.

  3. Remove Bacon & Reserve Grease: Transfer bacon to a plate lined with paper towels to drain. Leave 1-2 tablespoons of bacon grease in the skillet to cook the eggs.

Fry the Eggs:

  1. Crack Eggs into Skillet: Reduce heat to medium-low. Crack eggs directly into the hot bacon grease.

  2. Cook to Desired Doneness:

    • For sunny-side-up eggs: Cook for 2-3 minutes until the whites are set but the yolks remain slightly runny.

    • For over-easy eggs: Flip gently and cook for 30-45 seconds for a lightly cooked yolk.

  3. Season Lightly: Sprinkle eggs with a pinch of sea salt and a crack of black pepper

Assemble & Serve:

  1. Plate Eggs & Bacon: Transfer the fried eggs and crispy bacon to a plate.

  2. Optional Garnish: Garnish with a sprinkle of smoked paprika or fresh herbs if desired.

Ways to Make it Budget Friendly:

  • Buy Bacon in Bulk: Purchase bacon in bulk or family-sized packs to reduce cost per slice. Freeze extra bacon and thaw when needed.

  • Use Lower-Grade Eggs: Opt for store-brand or large white eggs, which are often more budget-friendly than pasture-raised or organic options.

  • Save & Reuse Bacon Grease: Strain and store bacon grease in a jar for future use in cooking vegetables, meats, or eggs—adding free flavor and saving on oil costs.

  • Batch Cook Bacon for Multiple Meals: Cook a large batch of bacon and store it in the fridge for up to 5 days. Reheat as needed to save time and avoid cooking daily.

  • Mix Eggs with Cheaper Protein Options: Add a little ground beef or leftover shredded chicken to scrambled eggs to stretch your protein and lower per-serving costs.

  • Add a Low-Cost Side: Serve with sautéed cabbage or sliced cucumbers for a fiber-rich, low-cost side dish.

Simple Flavor Boost Options (Optional):

  • Garlic & Herb Butter: Add minced garlic and fresh herbs to the bacon grease before cooking the eggs for an aromatic twist.

  • Chili Flake Heat: Sprinkle red pepper flakes over the eggs for a touch of spice.

  • Cheesy Upgrade: Melt a sprinkle of shredded cheddar or Parmesan over the eggs for extra richness.

  • Smoked Paprika Finish: Dust eggs and bacon with smoked paprika for a smoky depth of flavor.

  • Avocado & Lime Slices: Serve with sliced avocado and a squeeze of lime for added creaminess and brightness.

  • Hot Sauce Drizzle: Add a dash of sugar-free hot sauce over the eggs for a spicy kick.
