About the Recipe

A nourishing and colorful start to your day, this Mediterranean scramble is packed with healthy fats, protein, and fresh vegetables to keep you energized and satisfied all morning.

Ingredients

Ingredients:

  • 3 large eggs

  • 1 cup fresh spinach, roughly chopped (or substitute kale, Swiss chard, or arugula)

  • ½ cup cherry tomatoes, halved (can substitute diced fresh Roma tomatoes)

  • 1 tablespoon extra-virgin olive oil

  • 1 small ripe avocado, sliced

  • Sea salt and freshly ground black pepper, to taste

Preparation

  1. Prepare Eggs: Crack eggs into a bowl, whisk gently, and lightly season with salt and pepper. Set aside.

  2. Cook Vegetables: Warm olive oil gently in a non-stick skillet over medium heat. Add spinach and cherry tomatoes, sautéing for about 2 minutes until spinach has just wilted and tomatoes soften slightly.

Cooking Tip: Avoid high heat to prevent olive oil from smoking and maintain optimal nutritional benefits.

  3. Scramble Eggs: Pour whisked eggs into the skillet with vegetables. Stir gently and continuously with a spatula until eggs are softly set and fluffy (around 3 minutes).

Cooking Tip: Scramble eggs slowly over medium heat for a creamy, soft texture without overcooking.

  4. Serve: Immediately transfer eggs and vegetables onto your serving plate, placing sliced avocado alongside.

Friendly Flavor Boost Options:

  • Fresh Herbs: Add freshly chopped dill, parsley, or basil for brightness.

  • Za’atar Seasoning: Sprinkle a pinch of za’atar (a Mediterranean spice blend) for additional flavor complexity.

  • Goat Cheese or Feta (optional): Lightly crumble goat cheese or feta over the eggs for added creaminess, if dairy is tolerated.

  • Lemon Juice: Squeeze a small wedge of lemon over the avocado to enhance freshness and prevent browning.
