  • 2 lamb chops (4-6 ounces each)

  • 1 tablespoon extra-virgin olive oil, divided

  • 1-2 cloves fresh garlic, minced

  • 1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

  • Sea salt and freshly ground black pepper, to taste

  • 1 medium zucchini, sliced into rounds or half-moons

Preparation

  1. Preheat Oven: Set your oven to 400°F (200°C).

  2. Prepare Lamb Chops:

    • In a small bowl, combine half the olive oil, minced garlic, rosemary, salt, and pepper.

    • Rub this mixture evenly onto both sides of lamb chops.

    • Place seasoned lamb chops onto a baking sheet or oven-safe dish.

    Cooking Tip: Allow lamb chops to sit at room temperature for a few minutes before roasting for more even cooking.


  3. Roast Lamb: Roast lamb chops in preheated oven for 15-20 minutes until cooked to your preferred doneness (145°F internal temperature for medium-rare, 160°F for medium).


  4. Steam Zucchini:

    • While lamb is roasting, place zucchini slices into a microwave-safe bowl with 2 tablespoons water.

    • Cover and microwave for about 3-4 minutes, until zucchini is tender but still brightly colored.

    • Drain off excess water and drizzle with remaining olive oil and sprinkle with sea salt.

    Cooking Tip: Be careful not to overcook zucchini; steaming until just tender preserves texture and nutrients.


  5. Serve: Transfer roasted lamb chops to a plate with steamed zucchini on the side.
