Start your morning bright with this fluffy, flavorful omelet filled with aromatic fresh herbs and tangy goat cheese. Cooked gently in olive oil, this low-carb breakfast is easy enough for beginners but tastes like it came straight from a Mediterranean café.

Ingredients:

  • 3 large eggs

  • 1 tablespoon fresh parsley, finely chopped (can substitute basil or chives)

  • 1 tablespoon fresh dill, finely chopped (optional, but highly recommended)

  • 2 tablespoons goat cheese, crumbled (feta is also a good alternative)

  • 1 tablespoon extra-virgin olive oil

  • Sea salt and freshly ground black pepper, to taste

Preparation

  1. Whisk Eggs: Crack eggs into a bowl, add chopped herbs, and whisk gently to combine. Season lightly with salt and pepper.


  2. Cook Omelet:

    • Heat olive oil in a non-stick skillet over medium-low heat.

    • Pour egg mixture into the skillet, swirling gently to cover the bottom evenly.

    • Cook for about 2-3 minutes until eggs are almost set but slightly runny on top.

    Cooking Tip: Cook your omelet slowly over medium-low heat for fluffy texture without browning the eggs.


  3. Add Goat Cheese: Sprinkle goat cheese evenly over half the omelet.


  4. Fold and Serve: Using a spatula, carefully fold the empty half of the omelet over the cheese-filled half. Cook another 30 seconds to gently warm cheese. Slide omelet onto a plate.

Fresh Lemon Zest: Add freshly grated lemon zest to eggs for brightness.
