  • 1 cup broccoli florets

  • ½ fennel bulb, sliced thinly

  • 1 tablespoon extra-virgin olive oil

  • Sea salt and freshly ground black pepper, to taste

Preparation

Roasted Fennel (Start First):

  1. Preheat Oven: Preheat oven to 400°F (200°C).

  2. Roast Fennel: Toss fennel slices lightly with olive oil, salt, and pepper. Spread evenly on a parchment-lined baking sheet. Roast for 15-20 minutes until tender and caramelized, flipping halfway through cooking.

    Cooking Tip: Slice fennel thinly to ensure even roasting and maximum caramelization.


Herb-Crusted Mackerel:

  1. Prepare Fish: Place mackerel fillet skin-side down onto a baking sheet lined with parchment. Combine fresh herbs, lemon zest, olive oil, salt, and pepper in a small bowl, then spread evenly over the fish.

  2. Cook Fish: Roast fish in the oven alongside fennel for about 10-12 minutes, until cooked through and slightly golden on top.
